Peach & Cherry Kuchen with Spiced Bourbon Cream

Ingredients:

Kuchen                                                                         

3 cups sifted flour                                       

3 tbs sugar

1/3 tsp baking powder

¾ tsp salt

¾ cup butter, cut in 1 inch pieces

9 fresh peaches

1/2 lb fresh bing cherries

1 ½ cups light brown sugar                              

1 ½ tsp cinnamon

3 egg yolks

1 ½ cup heavy cream



Spiced Bourbon Cream

1 qt heavy whipping cream

2 tbs powdered sugar

½ tsp cinnamon

1 tablespoon Bourbon



Directions:
Kuchen:  Peel and cut peaches in half. Remove pits from cherries and slice in half.  In large mixing bowl mix flour, sugar, baking powder and salt.  Cut in butter with pastry blender or fork until it is the consistency of cornmeal. Sprinkle mixture over the bottom and sides of a greased 9 x 13” pan. Place the peach halves and cherry halves over the dough. Combine brown sugar and cinnamon and sprinkle over the peaches and cherries. Bake at 400 degrees for 15 mins.  Meanwhile, mix the egg yolks and heavy cream. Pour over fruit and let bake for 40 minutes.

Spiced Bourbon Cream:  Pour heavy cream in bowl of stand mixer fitted with the whisk attachment. Add in the sugar, cinnamon and bourbon and whip on high speed until stiff peaks are formed. Spoon a dollop on each serving of kuchen. Enjoy.
