South Carolina barbecue is more than a meal—it’s a story of smoke, heritage, and community. Join Chef Craig Kuhns and Nathan Spainhour, author of The South Carolina BBQ Project, for a special dinner exploring the history, regional influences, and enduring traditions that have made Carolina barbecue an iconic part of Southern culture.
Throughout the evening, Nathan will share stories from his travels across the state, tracing the evolution of South Carolina barbecue—from whole-hog pits and regional sauces to the distinctive flavors of the Lowcountry and the side dishes that complete the table. Together, we'll celebrate the pitmasters, families, and communities who have shaped this beloved cuisine for generations.
As a special keepsake, each guest will receive a signed copy of Nathan Spainhour's book, The South Carolina BBQ Project.
Dinner Menu
This dinner will feature pit-smoked pork butt, traditional South Carolina hash and rice, slaw, classic Southern sides, fresh breads, and a tasting of the diverse barbecue sauces that define the regions of our state—from the mustard-based sauces of the Midlands to the vinegar and tomato traditions found across South Carolina. The evening will conclude with a classic Southern dessert, with beer and wine to complement the meal.
