The Smithey Ironware Carbon Steel Roaster is hand-forged in Charleston, South Carolina, and it is one of the most versatile pans you can own. It sears on the stovetop, roasts in a hot oven, and looks good enough to carry to the table.
Carbon steel heats faster and weighs less than cast iron, but it builds the same kind of natural non-stick seasoning with use. Each roaster is hand-hammered by a blacksmith, so the texture and shape vary slightly from piece to piece. That is part of the design, not a flaw. The low, flared sides help moisture evaporate, so vegetables caramelize and chicken skin crisps instead of steaming.
Choose your shape:
- Round: an all-purpose roaster for a whole chicken, pork chops, braised short ribs, or a big pan of roasted vegetables.
- Oval: a longer shape for whole fish, gratins, tenderloin, and oval-shaped side dishes.

It is a good fit for cooks who want one pan to sear, roast, and serve. If you want a deeper pan for big braises, see our Dutch ovens.
Because carbon steel is thinner than cast iron, it responds quickly when you turn the heat up or down, which gives you more control when searing.
Hand-selected by our Greenville team for cooks building a kitchen that works as hard as they do. Available for local pickup at our Buncombe Street shop.
Q: What shapes are available?
A: This listing includes a Round and an Oval carbon steel roaster.
Q: How is carbon steel different from cast iron?
A: Carbon steel is thinner and lighter, heats faster, and responds more quickly to heat changes. It seasons the same way cast iron does.
Q: Why does my roaster look different from the photo?
A: Each roaster is hand-forged and hand-hammered, so small variations in texture and shape are normal.
Q: Can I use it on induction?
A: Yes. Carbon steel works on induction, gas, electric, in the oven, on the grill, and over a fire.
Q: How do I care for it?
A: Hand wash, dry immediately, and rub in a thin coat of oil. Do not put it in the dishwasher.
